| Chinese Spinach has double the amount of iron than English Spinach.
It also contains considerable amounts of vitamins A, B and C. Health benefits: May reduce risk of cancer, antioxidant protection,
may protect against eye degeneration, lessens chance of spina bifida, helps avoid and
relieve anaemia, and provides plenty of potassium.
Cautions: People with, or who have had gout, or kidney or
bladder stones, should avoid spinach due to its high content of oxalates. |
Uses
Bayam should be washed well and the leaves pulled off the stems before cooking. It can be
steamed, simmered in soups, or cooked in coconut milk with root vegetables such as sweet
potato or pumpkin. In western preparation, a few leaves of mint are added to the pan to
improve the flavour. Storing
Chill spinach, wrapped, until ready to use.
