Celery has a tight collection of green stalks or stems topped with many dividing leaves. Both stalks and leaves are edible. Celery provides high amounts of natural potassium and is a source of Vitamin B and C. 

Celery has been grown in the past for its anti-toxic properties. Raw celery is a pleasant, natural snack and a good juicer. 

Health benefits: Can help to prevent and reduce high blood pressure, diuretic effect; stimulates urine production helpful in joints such as gout that are related to body's retention of unwanted substances, and as traditional soother. 
 
 
 
 

 

Uses
Celery complements cheese, nuts and game dishes, such as venison.  Keep the outer stalks and leaves for soups or casseroles.  Remove strings from the outer stalks with a potato peeler 

Storage & Freeze 
Use young tender stalks. Remove any strings, wash and cut into 2.5cm pieces. Blanch for 2 minutes in boiling water. Chill in iced water for 2 minutes. Drain and place on tray in a single layer. Freeze for 30 minutes. Pack into freezer bag, remove air and seal.
