New Zealand Spinach |
Spinach is rich in iron. It should not be eaten every day
because it is high in oxalates. However, twice a week preferably raw, is
beneficial Health benefits: May reduce risk of cancer, antioxidant protection, may protect against eye degeneration, lessens chance of spina bifida, helps avoid and relieve anaemia, and provides plenty of potassium. Cautions: People with, or who have had gout, or kidney or bladder stones, should avoid spinach due to its high content of oxalates. |
Uses: Rinse spinach in 2-3 changes of water and cook only with the water left on the leaves after washing. Cover tightly, heat over high temperature until sizzling, then cook for 2-3 minutes until tender. Drain immediately. Storing:
